A sleeper of the vintage, Fèvre's 2019 Chablis Village opens in the glass with notes of citrus oil, white flowers, crisp green apple and oyster shell. Medium to full-bodied, satiny and chiseled, it's taut and concentrated, with racy acids and a long, chalky finish. Produced from some 40 hectares of vineyards, averaging around 50 years old, this was cropped at yields of 43 hectoliters per hectare. Unusually intense and structured, readers willing to give this cuvée a bit of bottle age will be rewarded.

From bottle, the 2017 Chablis Grand Cru Les Preuses is one of the twin
pinnacles of the Fevre portfolio, wafting from the glass with a lovely
bouquet of citrus blossom, mandarin, oyster shell and wet stones?exactly
as it did from barrel. On the palate, the wine is full-bodied, ample and
elegantly glossy, with incisive acids, fine-boned structure and a
precise, elegantly mineral finish. The Clos many be the most powerful,
but the Preuses is the more elegant, detailed wine in the range this
year.

Revisiting Fèvre's 2017 Chablis Grand Cru Les Clos six months later, as I was completing this report, I was also inclined to upgrade my score, as the wine is bouncing back from its recent bottling with a vengeance. Its pure and charming bouquet of ripe citrus fruits, crisp yellow apples, beeswax and spring flowers is now complemented by classy nuances of oyster shell and warm bread; and on the palate, the wine remains full-bodied, ample and satiny-textured, with an enveloping core of fruit, ripe but succulent acids and a long, precise and delicately chalky finish, but its impressive structuring extract and depth of concentration are even more apparent. In short, don't miss this superb effort.
