2022 Wasenhaus Spätburgunder Hohlen

The 2022 Spätburgunder Hohlen is from the Zunsinger Rosenberg near Müllheim that faces southwest and is located on shallow limestone soils in which vines were planted in the 1960s at pretty high density. Fermented with 90% whole clusters, this is an intense yet elegant, flinty as well as floral-scented Pinot with a coolish nose. Tight and leathery on the palate, with animal notes (Brettanomyces?), this is a masculine, intense and tight, saline and, hopefully, age-worthy Pinot with a concentrated finish that reveals lots of skins but less juice. Tasted as a sample ready for bottling in February 2024.

葡萄：シュペートブルグンダー（ピノノワール）　　樹齢：様々ですが半分は1960年代に植樹。
畑・土壌：Zulzinger Rosenberg村の痩せた粘土石灰質土壌。南西向き。ドイツクローン。
醸造・熟成：収穫後、ケースのまま10℃で冷却。90％全房。
木製タンクで10日間の低温浸漬。マセラシオン・セミ・カルボニック。破砕、ピジャージュ施さず。
温度が上昇した次の8日間は毎日軽いピジャージュ。合計18日間のキュヴェゾン。
熟成は228Lのブルゴーニュ産オークの古樽で16カ月間。
収穫から醸造中はSO2無添加。フィルター無し、コラージュ無し。ボトリング時にSO2をごくわずかに添加している。

1965年に植樹したという古木から造られる2022年初リリースのワイン。
ブルゴーニュよりブルゴーニュらしい。とコメント。
何を言っているのか分からないかもしれませんが温暖化の今、成し得ない姿がここにあるからこその感涙。
樽試飲では、まだまだその真価を見せるには早すぎます。
中間から寄せ付けない荘厳で潔癖なグラデーション。
キュッと引き締まる酸、ごくごくわずかに揮発酸を感じさせながら余韻が闇に飲み込まれていく。
井戸に石を落としたのにポチャンという音が聞こえない静寂と飲み込む余韻。
